Lady M’s layered crepe cake is a luxurious dessert crafted from up to twenty thin, handmade crepes stacked with light pastry cream between each layer. This cherry-flavored crepe cake recipe doesn't quite compare to Lady M's splendor, but it will come in handy when you want to impress at your next dinner party.
Ingredients:
Crepes (15 layers):
1/2 cup water
1 cup milk
4 eggs
4 tbsp butter (melted)
1 cup flour
2 tbsp sugar
pinch of salt
Layering cream/frosting:
1 can of sweetened condensed milk (14 oz)
2 cups heavy whipping cream
1 bag of dark cherries (approximately 1 lbs)
Step-by-steps:
We first make crepes, then make the cream while waiting for the crepes to cool.
Blend water, milk, eggs, butter, flour, sugar, and salt, until well combined.
Heat a medium pan over low heat, add a dot of butter to lightly coat the bottom of pan.
Add about 3 tbsp of batter, use a spoon/spatula to spread the batter and cover the entire pan
Heat the batter until lightly golden (it becomes easy to flip at this point), then flip.
Repeat this process to make the rest of the crepes.
Cream:
Remove the cherry seeds. Save a handful for decorations, then blend the rest into a puree.
Whisk heavy whipping cream until soft peaks form
Add condensed milk, cherry puree to the whipping cream. Whisk until a stiff peak forms.
Assembling:
Layer crepes, cream one by one. Decorate with cherries/flowers.
